Gourmet: Three years in a row

More then 800 international gastronomic industry experts decided the awards. Actually there is no set of criterias, the experts just vote for it. The judges are dived into 27 regions in which a chairman appoints 30 jurors. The juror includes journalists, chefs, restaurateurs and, of course, food lovers.

With 12 Michelin-starred restaurants, Denmark is Scandinavia’s gourmet food capital, but Copenhagen tops everything with Noma, the only 2 starred Michelin restaurant located in Denmark. Noma restaurant is run by chef and founder Rene Redzepi and his business partner and founder Claus Meyer. The name is a composition of two Danish words, “nordisk” and “mad”, what means Nordic and food. Noma is known for its innovative interpretation of the Nordic Cuisine. Not only this year, but in 2010 and 2011 it also has been ranked as Best Restaurant in the World.

In 2010, Noma “stole” the crown that the famous El Bulli restaurant in Spain had held for four years then. When El Bulli in 2011 pronounced that they would be permanently closing, it was easy for Noma to grab the title again. This year Rene Redzepi won the award again, being praised for being “the standard bearer for the New Nordic Movement” according to Restaurant magazine

Noma is located in an old warehouse on the waterfront in the Christianshavn of central Copenhagen. In 2004 the warehouse was turned into North Atlantic House, a centre for art and culture. In the same year Noma was opened with a stunning interior design by Signe Bindslev-Henriksen

“In an effort to shape our way of cooking, we look to our landscape and delve into our ingredients and culture,
hoping to rediscover our history and shape our future.” -Noma-
