Gourmet: Dinner by Heston Blumenthal

The Mandarin Oriental Hotel Group and The Fat Duck Group have teamed up to create Dinner by Heston Blumenthal, the first restaurant in London, chef Heston Blumenthal opened in the award-winning Mandarin Oriental, Hyde Park.

Blumenthal, with its three-star Michelin restaurant The Fat Duck in Bray, Berkshire, The Hinds Head pub, The Crown pub located in the same locality, has gained international reputation through its unique cuisine and refined multi-sensory way with food.

The first restaurant opened outside the town of Bray highlighted by the inimitable style of the chef in the culinary alchemy through which he has made a menu with influences of ongoing research and discovery of the British cuisine.

Focusing on the recovery and modernization of traditional Anglo-Saxon, the simple menu stands out for its contemporary dishes inspired by the historical English cuisine, including recipes dating back to the early sixteenth century such as Ketchup scallop with cucumber and peas, veal chops cooked with red wine reduction and boiled potatoes, and roast pineapple cake topped with cream and Jersey.

Mandarin Oriental and Heston Blumenthal have worked with the renowned designer Adam D. Tihany for restaurant interiors inspired by the knowledge of the kitchen chef Blumenthal on XV and XVI century, the resulting concept was a fully modern British brasserie, an innovative way to illustrate the past, not forgetting the English culinary tradition and its classic interior designs.

Tihany has used rich, natural materials like wood, leather and iron, elements of British style of the sixteenth century, which have been integrated in a contemporary way to reaffirm the renovation and modernization proposed by Heston in recipes typically British. With spectacular views over Hyde Park, the restaurant is also noted for its glass walls which allow a glimpse of the kitchen and unusual system of pulleys.

The chrome and steel contraption has been remodeled on the pulley system of the sixteenth century originally designed for the kitchens of the British court. They also have a private dining room for 10 people and a chef’s table for 6 people located in the kitchen. During the summer months, a terrace overlooking Hyde Park will enable customers to enjoy one of the most impressive locations to enjoy a tasty dinner al fresco. Dinner by Heston Blumenthal holds up to 140 guests and is open for lunch and dinner from May 2011 will be offered “tea time”.

The kitchen is run by Ashley Palmer-Watts, executive chef of the Fat Duck group, which has worked with Blumenthal for over ten years.

Dinner by Heston Blumenthal is open from 12 to 2.30pm and 6.30 to 10.30pm.
