HIROKI TAKEMURA

“Yemek gözle, burunla ve ağızla yenir”

RÖPORTAJ DİLEK CAN

Türkçeİstanbul’un seçkin mekanlarından olan Sunset’in şeflerinden Hiroki Takemura ile, Osaka’dan İstanbul’a serüvenini ve başarı öyküsünü konuştuk.

çok seviyorum. Her seferinde farkli yerlere gitmeye calisiyorum.

New Japanese Cuisene tarzından ve sushi “Taste and Techinuque” kitabınızdan bahseder misiniz?

Mezelerinizi

talks about his success story and the

adventure that took him from Osaka

Would you please tell us about yourself with your own words?

After graduating from school in 1972 I began working at Sushikou Restaurant in Osaka. I’ve worked as a chef in a number of restaurants in Japan and London. Before coming to Turkey I was working as the chef at a famous restaurant in Paris. While working at Nobu in London, how did you end up with a radical decision to come to İstanbul and work at Sunset?

TürkçeA friend introduced mo to Barış Tansever, the owner of Sunset. Mr.

Tansever invited me as a

Would you please tell us about your book “Taste and Technique” and your own cooking style “New Japanese Cuisine”?

It is a book I wrote on sushi tastes and techniques. It contains all the information needed for sushi making. As for New Japanese Cuisine, I can say that it’s a creative style similar to fusion cooking that combines traditional dishes with new techniques.

Whose food do you eat with appetite?

Of course the food I cooked is the best. Where would you take someone who doesn’t know anything about Istanbul and what would you recommend to eat?

I always take my visitors who come to İstanbul for the first time to a fish restaurant by the Bosphorus. I really like your “meze” (Turkish tapas). I try to go to new places every time. I love Döner. I really love Kokoreç (charcoal-grilled seasoned mutton intestines). Not to mention tripe soup…

When we come to Sunset, what should we choose from the Sushi menu? What would be the chef ’s recommendation?

Hand rolled Te-Maki sushis are my favorite. Also I love shrimp tempuras.

You say, “Food is eaten in three stages; with eyes, nose and mouth”… Can you please explain this for us?

TürkçeFoods don’t appeal only our stomachs.

First of all, it appeals to the eye with colors, presentation and look. Then it appeals to the nose with its aroma and finally to the mouth with its taste. These are the things I mention and highlight. It is necessary to give the same importance to all these stages.

guest chef in 2006.

Then he invited me again in 2007 and 2008. Finally I was invited to work at Sunset full time and I accepted. I’ve always found your country quite interesting and loved it more every time I came here.
